The Certificate III in Commercial Cookery provides the practical skills and industry knowledge needed to become a qualified cook and work in professional kitchens across restaurants, hotels, cafés, pubs, clubs, catering businesses, and hospitality venues.

Hospitality is one of the world's largest industries and skilled cooks continue to be highly valued across restaurants, hotels, resorts, catering businesses, entertainment venues, tourism operators, and event organisations.

This qualification reflects the role of cooks who use a broad range of cookery skills and kitchen knowledge to prepare food and menu items in commercial environments.  Build confidence in essential cooking methods while learning to prepare poultry, seafood, meat dishes, pastries, and desserts. You'll develop the ability to work effectively in a kitchen team and maintain high standards of food quality and safety.

You'll train with highly experienced chefs and gain hands-on experience in professional training kitchens and The Pavilion Restaurant , NMTAFE's award-winning training restaurant.

This course is offered through two different methods of delivery:

  • An apprenticeship, where you can earn while you learn, with structured training under a formal training contract with an employer; or
  • Entirely campus-based training, in class.

All participants who successfully complete the training for this qualification (either through an apprenticeship or on campus training) will be awarded an AQF qualification, i.e. the Certificate III in Commercial Cookery.

Trade Certification is only available to individuals who complete this qualification via an apprenticeship pathway. For details on Trade Certificate eligibility, please refer to the Trade Certificate Fact Sheet published by the Apprenticeship Office.

  • Food safety: hygienic food handling practices, safe food storage procedures, and food safety compliance standards
